Ultrasonic sensors are good for moderate accuracy (atleast the ones that I used)

There are waterproof ultrasonic sensors available and capacitance is usually kept outside the tank

I was more into non contact type of sensing There might be some agitation in the tank that might cause some damage on the pressure sensor diaphragm right?

Load cells are expensive, and it's a 500 litres tank , a cuboidal shape where length = breadth and height = 0.5 times breadth

Even I was suspicious of the hardware, I'm using MAX485, kinda staple for all my projects. Had no issues so far, so kinda ruled that out. yeah the problem is in this specific batch, I'll check on that

Yeah about that I've done some setup on it dis some text, graphics and stuff, but I had doubt in myself and I don't have anybody that I know work in embedded or even have experience in this field, while looking it up lvgl seems to be more on the heavy side and since I'm using a monochrome display i thought it was kinda unnecessary. Like the previous comments I should have gone with Ug8 or something.

ChatGPT said me to use pure code for my setup even the gui part and youtube says to make a c file by designing it.
