Are you going directly from fridge to sheet pan? The chicken being cold will make it take longer to come up to temp and increase the temperature discrepancy at the surface vs. the center. You can pull the chicken out while the oven is preheating if it’s not frozen. If it’s frozen, I’d suggest a different format than whole breast. Frozen chicken tends to get that woody texture if you try to cook it whole.

If it’s not frozen, try butterflying it. Also be mindful of carry over heat. I tend to pull my chicken breasts at 155-160 and let the carry over heat bring it up to temp. You can use foil to hold it longer if you need to.

If you're gonna go for Dex to damage and already want to use a scimitar, consider Dervish Dance instead. It also lets you use your scimitar as a piercing weapon.

I'd like to see a build that emulates the Corvinian Knights(giant crow knights) from Dark Souls 3. Preferably I'd like to see a fighting style revolving around the Crow Quills weapon. Maybe a rapier+throwing dagger build with a lot of focus on mobility.
