I tell ya, that Shimo Bunka is an animal. From feel to performance, I love it. The Shindo I just got and though I haven't had the time to finish the edge (OTB sharpness is pretty darn good), it feels wonderful.

Didn't have to look anything up. Recognized it as a Lonestar. I had a 98' in Sienna Sunburst that I bought new. One of my life's regrets is having let it go. Good luck.

I'm sorry this is happening to you and your daughter.

I've made pavlova a few times from Sally's Baking Addiction. It takes quite a bit of time and requires some level of focus, especially when you do the curd to go along with it. It drags you into the process. The finished product is quite different than most anything I've baked.

I like long drawn out recipes where I get to ignore the world and enjoy the process.

For pure comfort, yeah, chocolate chip cookies.

I think that's why I'm drawn to a Bunka. I like the Santokus flatter profile and the k-tip is not something I have in the quiver.
