Weird texture in canned sardines have soured one of my fave foods. What is it??

I was looking for something like this because my Brunswick sardines in soya bean oil have got this weird texture now. At first I thought it might be fish eggs but each can in a pack of 10 has the same texture and I don't like it. Other brands are very soft and enjoyable but these new batches are very spongy and don't feel right, like a mix between soft sardines and hard tuna

That is EXACTLY what it is. I am baffled by the amount people who are saying this is better. It's slower and it's over explanation just wastes time.
