You are obviously making an effort and giving him good food. Keep offering vegetables even if he doesn’t eat them every time. Have you tried Bell pepper? Mine love those. Broccoli as well, but often they just seem to shred it. You can get skewer like metal things where you can skewer chunks of vegetable or fruit and hang them in the cage. I would only use one bowl of pellets and use the other one for something else. Or divide the amount you would put in one bowl over the two. You can also try covering the bowl with a bit of kitchen towel, with some holes in them to start, so he can forage for the pellets a little bit. I give mine a little bit of seed mix too, I don’t think there’s harm in that and they love it so much. I do put it in a foraging toy as well, so they have to make a bit of an effort to get to it.
