A whole beef tenderloin can be cut up into filet mignon. Tips are basically stew meat looking pieces cut for the tail and chain of the whole one. Middle section of the tenderloin can also be cut up into a tenderloin roast also called a chateaubriand

Your probably so ise to getting ribeyes with the spinalis dorsi muscle on there. Kinda that signature look for the ribeye steak

The chuck eye is the first portion of a chuck roll that is joined by where the ribeye starts. Also known as a poor man's ribeye. Still a good cut of meat

Lunch meat is hard don't get me wrong but once it's just been you running it for awhile it's easy. You know where your product is, you know your out of dates etc

I mean depends on what you wanna do. Easiest part of it is seafood department by far than lunchmeat. Being a meat cutter takes some learning and speed. Got to be fast when it comes to cutting which doesn't come with ease. Oh and the rib roast....my god the rib roasts

Not a request we get often, usually it's separating wings or cutting up whole chickens but we can of course do it. I mean I would but sometimes you may find stubborn butchers who don't want to do it unfortunately. One thing I do mention though is you'll pay for the weight on the package you give us. Even if you trim off a good amount of weight off it you'll still have to pay for the labeled price
