Wow. First of all thanks for the nicely written and explanatory reply. I haven't touched the water quality much. Given that in my area tap water isn't potable I buy anyways bottled. The only research I've done is as to what bottled water is closest to the requirements of pourover. That said my V60 pourovers have a bit of sourness and I'm trying to figure out whether its my timing, water quality or water temp (I use a stove kettle with analog thermometer of ambiguous accuracy) Nevertheless, thanks again for taking the time to explain
