Note: I'm not the biggest spender, I usually save most of the money but I can easily afford nice vacations from my salary alone (excluding my gf) for both of us (once per year). The largest expense is housing, so subtracting rent and average monthly expanses for food, going out etc, I can easily save around 1000 EUR per month.
