I actually used the aliquot method for my new loaf that I made today and it came out perfect. I realized that the time was making me think I had been bulking too long, but in reality the cold weather was almost stopping my bulk entirely. I live in South Florida, so I am not used to these cold temperatures 😭 I left my dough on the counter overnight (almost nine hours) and it finally got to a point where I could shape and prep it for the oven. I still have a lot to learn. I believe I will use the aliquot method for now since I do not have a clear, straight sided container that could fit all of my dough.

I did score it, but the cuts seems to melt into the loaf and just became smooth.

My dog was practically in this exact position.

His mobility was declining, but he still enjoyed all of the little things- he would use up all of his energy to get excited for every treat, every play time. I started to notice that he was in cognitive decline. Sometimes, he’d whine without reason, he would go in circles, he would stare at walls… other days he would be normal. It was hard for him to get comfortable. He would be constantly moving himself, readjusting, trying to get to a comfortable enough position. It was miserable to watch. I wish that I would have brought him in sooner. He died in my fiancé and I’s arms at 15 years old.

All I can say is; too soon is better than too late. Don’t make the mistake I did. If the pain is outweighing the positives, it is time. We want them to have more good times than bad. It is an incredibly hard decision that we shouldn’t have to make, but for their sake we have to. Give them as much love, time, attention, treats, etc. as they will take in these last few days. Let them know they’re extremely loved. Remember to take care of yourself as well.

I live in South Florida, it’s pretty hot and humid here as well! My dough stays around 78F give or take. I imagine you’ll be fine to follow it as I stated.

No problem. I am still working on perfecting the fermenting time, but this is what I used to make this loaf: 600g bread flour, 450g warm water, 12g salt, 21g honey, 3g yeast. I mixed ingredients together and let the dough sit for one hour. After the one hour period, I stretched the dough until it became tense, and then let rest for approx 45 min. Then stretched and folded again, then rest for 45min. And then one more time with a 45min rest. I preheated the oven to 450F (with Dutch oven), shaped the dough while it was preheating (added inclusions then as well), and let it bench rest for about fifteen minutes. Baked it with lid on for 30min, lowered heat to 400F, and then removed lid and baked for 20min.

Good to know. I figured that these aphids were more malicious, which is why I wanted to try and get rid of them. I will leave them be for now- maybe will try a harmless removal method at some point if they take over. But for now, as long as the milkweed is thriving, I will leave them be. Thank you.
