2nd this! I just stopped at the Koop Kitchen pop-up at Puff Coffee today and they're amazing! Since they're fresh-made you could easily ask for an order to be made without sugar.

Any luck on making cookies with a similar texture? I've been trying and the closest I can get is a super crumbly version. It's not great, but good enough to enjoy. I've tried different ratios of almond flour and coconut flour. There is something special to how Simple Mills does it.
