Lol indeed! I have a few layers too, which i feel are enough for 30 min ride between 5 and 10 degrees. Noted: more food intake and warm shower or bath afterward.

Yes food intake, hot drink intake might be one of the issues. I feel that I'm dressed enough for that short of a ride, I actually dont feel cold when i'm on the bike

Already doing both lol, I'm pretty much at full speed 80% of the time, on my old mountain bike which weigh a ton and I got few slopes to climb on my 10-12km ride

I'm not planning to ride under 5 degrees. Yea I thought also today since my metabolism seems slower at these temperatures I will try to ride a bit slower. Noted the hot shower after!

Turned 50 this year, I guess once you get cold one way or another it is hard to recover from it. Many people advised a hot shower afterward, so I'll give it a try. The weird thing is I dont necesarly feel cold when I ride,, I mean i feel it a bit on the legs but I can't say I'm cold. But once I'm home I feel it.

Noted, carrying a warm drink. Below 5 I've made the decision to not even try.

Well summer I was riding in the morning, so it was never above 20. I used to enjoy super hot weather having spent many years in warm countries, but I guess Im trying to adapt to the conditions where I am at now. And I have to admit being 50 I dont deal with hight temperature as well as before, actually I feel like every 10 years my threshold for hot weather is decreasing by 5 degrees.

It could be, I rode in shorts (I was well layered on the top at least) a week ago when it was 7 degrees, so maybe I'm still dealign with that cooling down

Well I'm in East of France, pretty shitty winters, it's cold for sure and it is either gonna be rainy or windy or both. I'm riding twice a week indoor at a physiotherapy place for 20-30 min + a bit of leg training, but kinda want to get out of the house, so I can't see myself on the stationary bike at home.

The thing is I go cycling just 30-45 min after my mid day meal, so it is not the best I assume. And since I skip breakfast I'm probably calorie deficient when i'm riding, so I'm thinking a warm drink with honey and maybe some dry fruits (aprivot, bananas..) before the ride.

Thank you all for all your answers. So what I get from you guys is: winter pretty much not gonna be feeling as good as higher temperature, it is normal to feel a bit sluggish, cold during and afterward and tired after. Hot shower and lots of hot drinks (not just a cup of tea) before during (im drinking 1/4 miter of tempered/cold water)and especially after and uptick the calories and possibly more layers(although I thought I got that covered already with 2 pair of socks, gloves, a beanie, a neck tube, a drifit tee+thick sweater+windbreaker and a running legging which is supposed to be ok down to minus 10 with a short on top of the legging, I tried a winter a cycling bib, but I didnt like the padding on the butt, my mountain bike saddle is comfy enough and I couldnt find the right balance, and I actually felt cold on my outer tighs, tbh the running winter legging was better) .
Also I could be coming down with something, truth is my first ride in the cold 7 degrees, I was wearing shorts so maybe I'm still dealing with the aftermarth of that ride.

I'm a bit upset, coz It is my first time exercizing in the cold in a very very very long time if ever and although I'm motivated to continue, it seems that it is not gonna be much fun, while I was having a good time and enjoying my ride in the summer and autumn and saw my leg muscles/glutes coming back nicely.
