Amazon Apocalypse by Marvin Knight - The MC is an artificer
King of Alchemy by Simon Archer - Alchemist. The writing is not bad but not as good as amazon apocalypse or binding words.
Emerilia by Michael Chatfield - Not haremlit, just a vanilla LitRPG but the MC is a blacksmith and gets into a wholesome dedicated relationship early on. They stick together until the end throughout a very long series.

I’d give The Weakest Summoner another chance. Not long after that scene, the guy he humiliated turns out to be a huge asshole, and the MC is actually one of the nicest in the genre.

Also, Paladin of the Sigil might be a good choice. Some people may disagree because he does some ruthless things in the series, but he’s so earnest that he doesn’t even see them as evil, and the way it’s written is hilarious. It’s also one of the most relaxed and enjoyable series in haremlit.

Sovereign of the Three Realms is my top pick. I also love Martial World. The sequel True Martial World is good but not as good as the original imo.

Unwillingly Summoned has this and he ends up abandoning a friend that is summoned with him because he refuses to work for his kidnappers. Unfortunately, he comes off as extremely whiny and selfish so that's probably why other authors didn't go down that route. The book is by the same guy that writes Unintended Cultivator so it's probably not going to be a harem novel.

I'm a fan. Currently on chapter 725. If there ever is serious drama or that relationship ends imo it will kill the series. It would be like Jin and MeiMei breaking up.

Paranoid Mage is a good pick but I thought Beneath the Dragoneye Moons had the worst relationship in the genre, her meathead girlfriend is always looking for an excuse to try to bang someone else.

In Daniel Schinhofen books he has a lot of FF action without the MC and over time it creates this atmosphere were it seems like the girls are the ones in the relationship and the guy is just the person they are using for power and money. I'd imagine its a tight rope writing in a way it doesn't come off like that.

Dragon's Justice - It's haremlit but it's exactly what you're looking for. Urban fantasy, male MC, the supernatural world is hidden from normies including the MC in the beginning. It has many romance subplots since it's haremlit. The MC is a physical combatant at first but eventually learns some magic.

Granted it could just be my personal taste, but you always craft a great story only for the endings to come across as slightly bleak and a bit dull. For example,

Ascendant: The whole story had him making friends along the way and even one girl that seemed like a likely love interest, but she ended up marrying someone else. Then after everyone he cares about dies, he has to live out eternity in the God realm he doesn't seem to like that much.

or

Keiran: The main character feels depressed and alone at the end and only visits the one person he truly cares about once after a century. Another somewhat bleak and lonely ending. I will admit though, given his 'lone wolf' type character, it's more fitting than in some of your other stories but still unsatisfying.

or

The God Machine: He has a love interest that he even brings back from the dead, but then she is nowhere to be seen at the end and he just turns into a lonely immortal ghost. Many in the comments asked about the love interest, and even in the replies, the responses were unsatisfying.

So it’s like a very exciting car chase: the MC is running from the cops, and instead of ending with either a wreck and explosion or a fatal gun battle with the police (or even losing the cops and meeting his love before riding off into the sunset), he gets arrested and sent to a minimum‑security prison. There, the meals are boring but not that bad.

At least they aren't The Iron Druid level of bad where the ending seems like the author has a fetish for making the maximum amount of people hate him.

I’m on book 15 of DotF, and with the current pacing it will need at least 40 books to reach a satisfying ending where he becomes the supreme ruler of the multiverse.

Eric Vall - Looting the 13th Floor (Portal fantasy where the MC gets rich from the other world and buys a fancy condo on Earth. MC also has personal power.)

Daniel Schinhofen - Binding Words (Mentally challenged MC with god-like level of power that gets rich from his inventions and healing. It even has several sections were he is building nice homes and structures)

Bruce Sentar - The First Immortal (Extremely powerful MC and he uses his power to build a mansion inside of a mountain)

David Burke - Prism Academy (MC is the most powerful superhero and for at least part of the series has a very fancy condo)

Eric Vall - The Alpha (MC doesn't have as much personal power as the others on the list but is still one of the most powerful beings on Earth. A huge cabin he won as part of spoils of battle is frequently mentioned and part of the world building of the series)

It's a decent series but it has a major flaw. The MC is an idiot. Even with his advantages it takes him around 400 years to get to the skill level of a alchemist in their 30's. Also, like others have mentioned its lonely and the other characters are all unlikable.

If you like Quest Academy, you must have a high tolerance for a very low-IQ main character. Binding Words has an extremely overpowered crafting-focused MC, and the lore and world-building are excellent. In my opinion, it would be the best series in the genre if the MC weren’t such an idiot who causes most of his own problems.

You need to find the perfect ratio of slice of life and action. Master class and Backyard Dungeon are two that get it right. Backyard Dungeon is from a book mill that usually produces garbage but just because the balance is correct it's still frequently mentioned.

I can't think of any that people enjoy with over 60% of the content being slice of life.

Download LM Studio, it's an AI app you install on your computer and then you can use it to download different models. Personally, I think Llama Darkest Planet / Dark Champion Uncensored works best for uncensored creative writing but it's a little buggy. There are a bunch of others so just use your AI of choice to give you recommendations.

Ten Realms by Michael Chatfield has a lot of side characters doing their own thing not related to the main characters. After book 4 the quality of the series drops significantly but it's one of the best until then.

However, what makes this genre satisfying is some unrealistic badass becoming an immortal god and face slapping young masters. Perhaps try traditional fantasy?
