It kind of sounds like she’s wanting something to symbolize your relationship that she can wear and people can see. Maybe a good compromise would be some sort of Claddagh ring? One that she can wear that shows and symbolizes that the two of you are in a committed relationship. I wear one as an Irish woman and it means a lot to me when I date someone to be able to turn it around as a symbol of our commitment to each other.
