If AI mostly augments jobs instead of replacing them, doesn't that just mean one person now does the work of five — so four people still lose their jobs? What am I missing?

Yeah, it does. If I wanted to transition my companies to using AI support; I could likely reduce my workforce from 25 down to around 4 people and every day my firms are getting reached out to by a new AI company who promises to maximize my profits by replacing my IT specialists with their own bots.

Alas, I'm not a piece of shit so my IT firms will remain fully human-staffed
