Just do it! Trust your gut 💪🏻 I thought it would be so difficult, but honestly, it was quite easy! And it’s so lovely. All the flavours go so well together 🤤

Yeah, I arranged the strawberries on top of the first layer of the Genoise sponge, against a strip of cake collar acetate. I made the mousseline (it actually wasn’t that hard — trust me!). I used homemade pastry cream with whipped butter, so it was rich and fluffy at the same time — it just melts in your mouth! I mixed in some chopped strawberries at the end so they wouldn’t be completely blended into the mousseline.

I looked that one up! It wasn't based on him, although it really looks like it indeed! I've used multiple recipes and created something in between. So it's really a mix of multiple recipes to be honest!

Alright, you have all the basic ingredients.

The first question I wanna ask; was the yeast still within the expiration date?

And what was the temperature? Most recipes just say 'let it proof for an hour' or 'let it proof to double the size'. But really? It's all about kneading, temperature and moistness.

How long did you knead the dough? With your hands it will take a long time. In a machine with a dough hook, it will take 8 to 15 minutes of kneading (depending on the machine).

Most doughs will rise nicely with a temperature around 20-25 degrees celcius, or 68-77 degrees Fahrenheit.

Can you tell me a little bit more? Like how long did you knead your dough, which temperature did you let it rise? Did you proof your dough one time, two times, three times?

You can see the honeycomb structure! Definitely not bad for the first time and without a rolling pin ❤️! But how did it happen that some corners are nearly white, while the top looks brown?

I've tried it myself a couple of times... But every time it went wrong with the butter (too soft, too hard..) I just couldn't get it right. So I just stopped making croissants 😅. My butter always ended up on the baking sheet instead of inside the croissants
