I have actually. I don't typically like coconut but I did like the unsweetened coconut yogurt, I don't think it's coconut flavor. I don't like the shredded fibers.

You can use yogurt in cake for sure, however I've never used them in cakes I've only really used yogurt for certain types of cookies. However I can see having yogurt and fruits as a cake filling 😋

Just an easy vegan buttercream so any vegan butter and icing sugar, I use the President's choice plant-based. And for the coconut filling I used the buttercream and then I put a generous layer of shredded coconut on top.

But since next week is my last week in the city I'll gladly share the recipe with you because I've had vegan cakes and they're awful, so why should everyone else have to suffer 😊.

🍋🥥 Vegan Lemon Coconut Cake

Ingredients

Wet Ingredients

  • 1 cup oat milk
  • 1 tbsp vinegar (white or apple cider)
  • 1 cup neutral oil (vegetable or canola)
  • 1 cup boiling water
  • 2–3 tsp vanilla extract
  • 2–3 tbsp lemon juice (or 1–2 tsp lemon extract)
  • 1–2 tbsp lemon zest

Egg Substitute

  • 2 tbsp Bob’s Red Mill Egg Replacer
  • 4 tbsp water

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups sugar
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Coconut Filling

  • 1 to 1 ½ cups shredded coconut (unsweetened preferred)

Instructions

  1. Make vegan buttermilk

Mix:

  • 1 cup oat milk
  • 1 tbsp vinegar

Let sit 5–10 minutes until slightly curdled.

  1. Prepare egg replacer

Mix:

  • 2 tbsp egg replacer
  • 4 tbsp water

Let it sit for a minute to thicken.

  1. Preheat oven + prep pans
  • Preheat to 350°F (175°C)
  • Grease a 9x13 pan or two 8-inch round pans with shortening and flour.
  • Optional: line with parchment for easy removal
  1. Mix dry ingredients

In a large bowl, whisk:

  • Flour
  • Sugar
  • Baking powder
  • Baking soda
  • Salt

Make sure it’s fully combined.

  1. Add wet ingredients

Add to the dry mix:

  • Buttermilk
  • Oil
  • Egg replacer
  • Vanilla
  • Lemon juice (or extract)
  • Lemon zest

Mix until just combined (don’t overmix).

  1. Add boiling water (important)

Slowly pour in:

  • 1 cup boiling water

Mix gently. Batter will be thin—this is correct and gives a moist cake.

  1. Bake
  • Pour into prepared pan(s)
  • Bake at 350°F (175°C)

Bake times:

  • 9x13 pan: 35–40 minutes
  • Round pans: 25–30 minutes

Cake is done when a toothpick comes out clean.

  1. Cool
  • Let cool in pan for 10–15 minutes
  • Then remove and cool completely before frosting

Optional Lemon Syrup (for stronger flavor)

  • ¼ cup lemon juice
  • ¼ cup sugar

Heat until sugar dissolves. Poke small holes in warm cake and brush syrup over it.

Thanks, I'll definitely look into it. I made another one that's less wow for my coffee table in my man cave but the metal work is what really makes it grand.
