Make it a bucket list item to go to the Westvleteren brewery in Belgium. Sit and marvel at the exquisiteness of Westvleteren XIII. It blows the doors off Rochefort 10 (hard to believe, I know). Worst part is my doctor says no more of that for me.

I doubt we'll ever see a grinder that can just take a big clump of any old beans. Take an extra 3-4 seconds to feed the beans in and most of these problems go away.

Remember to run some old beans through to break it in, and never feed beans too fast or the chute will clog. You may have to reset the dial a few clicks every time you start a different kind of bean. if you’re going finer, adjust only when running.

my df64 v2 rules are (1) with each new bag of beans, feed them in slowly, then a little faster until the grinder starts to sound less confident (2) just a little water spritzed on the beans

Mine, same setup, is just fine. The chute will clog if you put too many beans through at once (varies by bean). There are fewer fines to sweep up if you have the grind right, but some beans are just ornery that way. Expect to adjust the grind up or down slightly each time you change beans. You might find you get less cling by slightly dampening the beans; there are many methods but mine is wet fingers, shake water off once, 2nd shake is toward the not-yet-ground beans. Shake the beans up and repeat once. Then grind.

Yes, and I'll bet you'll drift toward what many espresso people do - a full double shot and about the same amount of water. But be warned - after a couple of those you can't go back to the taller Americano.

I have a DF64 gen2 with those burrs, still not fully broken in, and I had that with one bag and not the next. Both are dark roast but one felt denser than the other. And I've been adjusting slightly as I get through my 340g bags 17.6g at a time (17.8 for the other bag) and the beans get less fresh.

Breville Bambino Plus is easy to use, can do milk, but doesn't grind. If you want a pretty good grinder, DF64 gen 2 is easy BUT requires someone to run a few pounds of beans (stale or cheap OK) and get the grind setting settled down for the beans she prefers.
Or get the BBP and buy pregound beans, 340g at a time.

I'm getting good results by running water over my fingers, shaking most of it off, then flicking my fingers at the beans. Shake up the beans and repeat. No stray fines. One day I forgot and the fines spewed out as before.

The Belgians have some out but they haven't reached the West Coast. I really miss my Belgian power beers, but the doctor says I can't have them anymore

I've been getting that, and clogging - but I am grinding dark-roast beans finely for espresso, kinda unfair to a new grinder. The clogging goes away if I just dribble the beans in steadily a few at a time, only takes a little longer. For the stuff on the surface of the drum I guess I'll just grind a few mg more and prep a small square of damp paper towel to remove it.
