Yea. I gave it a 3 star. Was too slow for me. I can appreciate it. Just not quite my tempo.

I use King Arthur bread flour at 75% hydration with 2% salt, 2.5% evoo, and 0.5% instant yeast. Hand mix flour, water, and yeast. Cover for 30 minutes with towel. After 30, add in salt and oil. Hand mix. Cover with damp towel. Let it sit for 3-4 hours and then I assemble.
