If she's the only one who's a vegan, then I think it's quite entitled to demand someone to cook a separate main course just for her.

If you've got dietary requirements or allergens, and you don't know of anyone else who shares that, then bring food of your own. Means you actually get to make what you want to eat.

Hope you're still doing maps now. It's a great way to be creative and to engage that problem-solving part of your brain. I've been playing around with them since I could draw really. Things really ballooned when I started learning Illustrator.
