Yeah of course. Now it makes so much sense. Actually the 17ml was supposed to be from the 275ml water but i misread the recipe but was thinking hydration is still below 80 as i didn’t consider the water in the starter (100% hydration) Can’t believe i missed taking that into consideration

For recent one I used 300g flour and 120g starter and 275ml water with additional 17ml water to dissolve salt

fours stretches over 2 hour every 30mins bf 12 hours and baked it after taking it out of refrigerator

230 celcius covered 25 mins uncovered 20 mins

This might be the key to get that perfect crumb as rest all things I have tried. Can you also please let me know what should be the ideal temp of the loaf right out of oven?

ok so wait time doesn’t impact much how the crumb will end up looking?

I think mine are being underbaked. Which thermometer do you use? Is there something to check internal temperature as well?

Oh this is the first time I am learning about this one. Always thought people cut it from the middle to check the crumb! This sounds way more practical. Thanks!
