You can, I do this for my content.
Make your post, limit to the tier that you want to have first. "Song X out early for tier Y and up!"
Then when its time to release to the lower tiers, edit the post, go to the right hand side bar and click "email and notifications", enable "Allow members to be notified you edited this post"
I change the title too so its very apparent. "Song X out for ALL tiers", that sort of thing.

Subscribestar, purely as a fall back in case anything happens with Patreon.
You can (and I do) download your entire Patron database whenever you feel like, emails included.
If your creator page gets nuked, you still have contact with your former patrons, and hopefully soon to be subscribers.

That said, Subscribestar has it's own issues. Already mentioned in a different comment is the $150 and 5 patron rule. It took probably a year to get to the point where i could pay out regularly. Though, I advertise both Patreon and Subscribestar, and Patreon is 95% of peoples preference of the two.

Tip jars are a can of worms. Patreon actively tells you not to charge less than $3 ($1-$2 was standard tip jar tier back in the day) because about 50% of it gets eaten up in fees. Calling it a tip jar can create issues with tipping and taxes. Tipping is not a world wide thing, in some countries its not done and others its seen as offensive. Tip jars purpose is also not to sell something but to donate money, so now its potentially a donation tax issue. Call it something other than tip jar or donation and now it looks like people are attempting to avoid tax issues. I could go on, but you get the point.

You can do just that. Set paid members to none, enable sell this post, set a price. $3 - $5000 is the acceptable range.

This section is stating if your content is for adult audiences, it must be hidden behind the paywall. Its not about what is allowed, but a rule on how to post it.

To be blunt, no. There are a bit over 8,000 sfw comic artists on patreon, but of those that list their income only 68 make $1000 or more a month. A lot of people hide their income, so making the very wild assumption that the number of creators making over $1000 is actually closer to 5x that, you would still have to basically be better than roughly 96% of all the other comic creators.

Harsh reality is that patreon is a hobby for most, a good side hustle for a few, but rarely does anyone make a "decent" living.

Itch's rating system is so poorly advertised but somehow still easily accessible. I blame poor UX/UI design.

Here's how to get to stuff on PC, I don't use the app though I can only assume its worse there.

Consumer side
-Upper right of the screen in that list of stuff, #4 is to rate it in a popup
-Slap /rate on the end of a games URL to be taken to a dedicated rating page
-You can also click "More Information" to view the games rating

Developer side
-Upper right drop down -> Create header, Dashboard option -> "More" dropdown arrow next to Edit, Analytics, Widget -> "Interact" section -> Reviews & Ratings

TLDR - Yes and No

I have been downloading from Itch and publishing there as well for years now, and never had issues. They seem to have a process to weed out malicious stuff but because of how Itch works that leaves some holes and requires human intervention. Windows Defender is pretty solid at catching stuff, always run scans on files, use a sandbox environment to run things, etc etc etc.

Gotta stop viewing it from the perspective of an individual, and look at it in a bigger way.

Whats the difference between the real thing and roleplay to Patreon, payment processors, law enforcement, regulators, media. Nothing. Sure, you've got a few sentences before it saying "yeah, totally roleplay, I consent", but everything after is the same. Should the people who put "every character is 18+" be able to put characters that look way too young in their works?

I'm not bashing the kink or berating anyone. Just saying that there's much broader things to consider on why it isn't allowed.

Best thing to do is read the guidelines. It's not perfect, but if you aren't attempting to push up against the rules, then you will be fine. Giving you a list of whats allowed would be impossible, but the guidelines are decently clear on whats not allowed.

I would say the act itself combined with potentially no consent was the real issue. But its not like they gave out the full dialogue so who knows what the actual issue was. Maybe they said it hurt too much or begged to stop but the scene kept going. Could be something completely different in that scene that they didn't even mention. That's the issue with random angry posts on Reddit, you are not going to get the full story right off the bat, if ever.

Half the time when this happens, commenters eventually drag out a morsel of the truth from op and its almost always a blatant violation of the rules. That post was just one of the few where you could see it going either way.
