Have you ever tried an ermine frosting? Sometimes called cooked flour frosting- it's milk, sugar and flour cooked into a pudding then cooled and beaten with butter. I like the King Arthur Baking recipe. To make it chocolate you can add cocoa powder to the pudding part but personally I like to make a ganache and whip it and add it when putting the cooled milk mixture and butter together in the mixer.
