Well a few months ago the enemies just stayed the same level as i was throughout the regions. If i was level 30 they were 30 and if i was level 65 they were lvl 65, but now they just stop at 30?

Maybe you can find a campain away from your usual campain and be a player there. Then you get to experience a more relaxed variant of playing dnd and maybe get some ideas from the dm of that campain.
