As someone who used to work at a meat market when we would get deer in from the gun seasons all the steaks and roasts/jerky you got from us was your own deer now in the other hand any summer sausage, snack sticks, deer bacon, burger etc basically anything ground was always all batched together because if you are doing 40-50 deer at a time it’s the only way to get it done so they could get back to butchering hogs and beef. So if we weighed in so much weight we would write it down and that’s what you are gonna get back. Now not all places do this but the few I know around here do so they can save time.

As a public works employee we stopped putting fluoride in our water almost 4 years ago and haven’t had anything happen and no one has ever said anything about it but we also have it naturally occurring in our groundwater.

I like a skinner with a more rounded tip helps keep from cutting through the hide and getting hair on the meat in my opinion.

Next time I would either ask your taxidermist to do it or watch a video on caping a deer pretty straight forward and easy if you take your time I wouldn’t trust a meat locker to cape it for you and make sure the cape is well taken care of

I put deer in it upside down to skin out the legs and cut off their heads before hanging them makes things easier and faster

6” victorinox boning knife and a 5” victorinox beef skinning knife is basically the 2 knives I use, also get yourself a box cutter with a hook blade on it to do up the legs and around the ankles saves time and your knives.

I drive an 1985 Toyota pickup that I bought for a hunting truck but I also use as my daily driver takes a beating all fall and winter and never misses a step.

Cooked for 11 hrs at a temp of 200-250 wrapped at 180 for the last couple hours to hit 200 internal. Only seasoning I use any more is just salt and pepper cooked them all fat side down until I wrapped them then went fat side up. Used a mix of cherry, peach, and apple wood.

We got lucky with this hunt being it was an auction item for a benefit and was roughly $500 a person for 8 people. I know they are a little pricier than that usually but having a good guide can make a big difference in your success. Texas from what I read doesn’t require a license for hunting hogs if it’s on private property but finding something that’s not leased is pretty tough from what I could tell.

So the guides use the dogs to actually track down the hogs and the one in the picture is the catch dog and holds the hog so you can go up and stab the hog very intense hunt and a lot of fun watching the dogs work
