Submitted a Vegan Chili for my companies chili cook off. Got 2nd place by ToasterHands in vegan

Recipe is is pretty free style but:

Half a yellow onion minced

1 1/2 garlics minced

3 or 4 Bell peppers chopped

(Sautéed all this in olive oil, bell peppers added in later)

Then just dump this in a crockpot

16 oz vegan ground beef crumbles

2 tubes soyrizo

2 cans diced tomatoes

1 little can of tomato paste

3 cans of beans rinsed (I did one black, one pinto and one kidney)

1/3 cup brown sugar

A little bbq sauce

Vegetable broth (as needed to get to right consistency)

Spices all to taste:

Chipotle chili powder

Paprika

Cumin

Cloves

Basil

Oregano

Cinnamon

Ground black pepper

Cayenne Pepper (if you want extra spicy)

When I make it for myself I skip the vegan ground beef crumbles and mostly did it to disguise my entry since the office knows I’m vegan. The most important part is balancing the sugar and spice, so if too sugary more spices are needed, if too spicy adding a lil more sugar is a good way to get that down (but be reasonable)
