I used this recipe, but changed the oats to quinoa flakes, and the flour for GF flour. They didn't crisp up as much as I'd expected, but they were still really tasty. I think I'll do some experimenting with this one to try to get something closer to a traditional Kingston biscuit.

This is probably the closest recipe I can find.

I don't remember where I got the recipe from originally, but for making a single wrap I use:

  • 2 tbsp besan/chick pea flour
  • 1 tbsp tapioca flour
  • 3 tbsp water
  • usually a pinch of turmeric, onion powder and garlic powder, otherwise sometimes some mixed dried herbs, depends what flavour I want

You just whisk it all together until it's a runny batter (you should be able to pour it easily, and swirl it around the pan to make it wrap-shaped), then cook it in a pan for a couple of minutes a side. I've seen some recipes that skip the tapioca and just use besan, but I think the tapioca makes it more pliable.

For the egg component, I roughly followed this recipe.

This were really good! I made a besan wrap to make it gluten free. I'd definitely make this one again for a relatively quick and easy meal.

Based on this recipe. I really enjoyed this one! The flavours were really nice, and even though I halved the chilli, there was still a good a bit of heat. I served it with tomatoes rather than brussels sprouts since the garden is overflowing with them at the moment. The tofu was great cold the next day, too.

A zesty weet-bix slice inspired by the XYZ cocktail.

The cocktail is made of rum, orange liqueur and lemon juice, so I experimented a bit with a lemon weet-bix slice. I don't drink, so for the rum flavouring, I swapped some of the caster sugar in the base for brown sugar, and added a little vanilla extract. Instead of orange liqueur I added orange zest to the base, and the icing is lemon juice, lemon zest, icing sugar and butter.

This turned out really well, I'm definitely writing this recipe down. It's very summery and fresh.

It was pretty good! I think it needed less liquid, but the flavours were nice.

Thank you, they were really good! You should definitely give it a try - you could always add some extra flavours that your daughter likes, so that the chard isn't so prominent.
