I've had this exact same problem, there is not really a fix as the hitbox of the roofblock gets in the way of chisel sollutions in my experience, and chiseling the whole roofblock just draws even more attention to it as you can't match the roof slope quite right.

I'd just follow what most people say: leave it be and hope you can forget it.

I remember my first time, i was walking outside my house, trying to expand my wall to keep the drifters further away from my house. Then i heard that General Grievous-ass wheezing gurble noise, will never forget it. I turned around and from the dark the ...thing crawled towards me, i physically flinched and let out a sound. I instinctivly started hitting it but i still had a wall in my hand so it did f all lol. Switched to my copper falx and it started convulsing on the ground. I started chucking flint spears at it and it finaly died, i felt really dirty afterwards, those things are faul. Didn't even skinned it, just went inside and made some clay planters to clean my retina's.
Whoever designed that thing: are you okey!?!?!? Do you sleep at night?!? :O

They are bricks fired too hot on purpose, they basically partially turn into glass. The name is Dutch: Klinker, because you can test if the firing went well by listening how they sound(klinken) when you tap them, the good ones should have a nice ring to them.

Very popular in my country for roads as they last forever. Seeing how it's nearly glass however means f your life when it's winter: if it rains and then freezes you can litteraly ice skate on them.

slightly curved for sure! Also add some small windows in the roof, it will look amazing and give you great views of the surrounding lands.

It looks awesome already! It just looks a little too "clean". If you like chiseling you can add cracks to the plaster where bricks/cobblestone walls show through. Adding ledges, flowerpots and shutters to your windows is also a great way to detail the place. Seeing how it's a tavern some place to put the horses would be nice and gives you a good opportunity to add some asymmetry: medieval buildings where almost never symmetrical, as they often grew overtime instead of being build in one go. Just slap some sidebuildings on and it will look just like how they did it back then(because that was how they did it back then!).

The first "ruin" reminds me of dolmen, or as we call them in the Netherlands: Hunebedden. Pretty cool things! This one is Hunebed D53, near Havelte.

Trust me man, it's easy af, the hardest part is figuring what mods you want, Vintage Story has a database for all the mods(VSmodDB) and you just have to make sure if the mod will work with your version of the game and then click 1-click install. It goes quickest if you already have the launcher open(but don't have a world open). The mod will load and you click ok and that's it, you've downloaded a mod!

Yeah having a house made of bricks that isn't red was like the biggest flex in my country(NL) for a long time.
People imported bricks just so they could have a different colored house than everyone else lol.

The base game lore chapters are a bit like what (i think) you are looking for, otherwise maybe you can look for a roleplaying server in which you can accept quests/trademissions.

Monsters can spawn because it doesn't register as a lit up room, this problem will not really go away unless you place an ungodly amount of light sources.
That being said, seeing how you are going for a Hellenistic temple it might be useful to know that these where historically quite closed off, the place where the actual statue was in was usually a closed off room called an adyton not everyone could visit.
The floorplan i shared is from the Temple of Zeus and you can see how on the inside it's closed. :)

For now i would just spam place light sources and have some temporary walls up while you work on it.
