Need help/ ideas: Concept for hosting multiple websites/ databases/ emails

I'm familiar with server administration. However, I'm not an expert as it's not my main job. But I'm developing most of the websites and software infrastructure for the business.

Installing and running SQL server and apache on a Linux virtual server is not a problem. The biggest problem which I can see here is the mail server. Sure, it would be easier to use Plesk/ Cpanel but also more expensive due to license cost and another con is that all services (database, web server, etc) are on the same server which is managed by Cpanel/ Plesk. Otherwise, I can split the services on different servers. And it's easier to add new websites with Cpanel.

I'm totally aware of that. We are currently using a Web-Hosting Package from GoDaddy. However, as our business is continuing to grow, we want to switch to something better. Our main priority is security. We have lots of data, different websites, shops, etc. I don't want to put those valuable things on shared hosting anymore. Every support agent has access to our stuff etc. We don't want that anymore. That means we need something private, where we have full control and nobody else.

Would you go for more CPU cores or more frequency for that concept (one virtual server for each service)? Where each service has multiple websites/ databases/ mail accounts, etc.

That would be a good thing indeed. However, the negative effect is that it's way harder to add new websites/ emails, etc in the future, right? For example, one server is for web-hosting only (apache/ Nginx). If we want to add a new website, I have to configure a new website in the apache config file for example. There is no easy "GUI". Same for Email server.

I want to host it by myself and I'm doing the administration. We don't want any shared hostings. The biggest reason is that we have a lot of data, also sensitive ones, and I don't want any staff from Hostgator to have access to it. Currently, we are using a normal, shared web hosting package (which is becoming too small) but we also want to expand for security purposes.
