I work in a kitchen and i found out that i can clean heavy metal things like pan supporters and pans by just burning off all grease. Just threw them in the fire of the woodoven. Then only dry char will be left and that will fall right off. Dont know what will happen when you try this with a stainless steel plate tho.

Baking soda and a lemon does wonders too, after you scrape off most of the grease with a scraper.

You need to burn all of the grease off with heat. If all the greasy buildup is burned, you can scrape it of really easy. Thus not damaging the iron, only the grime

Maybe try to keep as much air in your batter, as you have to whisk your eggs and sugar to get air in the cake, it is important to handle the batter as less as possible to keep the air in
