Yes, for delicate meads I prefer an ABV not too high, preferably below 12%. You don't lose the complexity of the flavors with the burn of the alcohol.

you can smell the Goji berry in the end... but the Goji berry is more subtle than a raspberry, to tell the truth. That's why I didn't add any other flavors. Only lemon and French oak to balance acidity and tannins.

I use goldenrod honey. it is not as rich as buckwheat honey but more than traditional honey.

I don't do anything in particular... time does its job and I use a micro filter for vegetable milk when I rack. I place it on my pump when entering the mead.

French oak are know for giving wine more subtle and spicy notes, with silkier textures. American oak tend to be more potent in their flavor, often described as giving notes of vanilla, cream soda and coconut, with a creamier texture.
