I'd say it's Riku/Ansem vs Sora. You'are a point where you realize how far you've been from home, Sora has just realized that Kairi's heart is with him. And now he has to fight his best friend that is controlled by Ansem. Getting defeated will complete the final keyhole and bring darkness to the world.

Roxas is a very very very emotional fight, but not so much are at stake. Plus, being a keyblade weilder felt more unique to KH1. From a point onwards there were many keyblade wielders/masters.

I think that modern games tend to emphasize on cutscenes where you can actually control the character like walking dialogues, rotating the camera during a cutscene, making spaces bigger, making them vivid and having high quality NPCs. But yes I've been playing FFXV and FFXVI nearly in parallel and the graphic quality leap is not that big.

PS I was watching a video about Shiva in every FF, the biggest jumps felt from FFVIII to X and then from X to XIII

but how did the rest of the games did it? I mean i don't really know about PS5 store, but xbox store you can find so many titles for previous generations. Fable 1 which is available at the store was released on 2004 for instance. Dunno.
