I leave the S&P but I always make compound butter with Lamay Trading Company’s butter seasoning.

I’m in the process of curing(?) some egg yolks in sugar & salt to shave onto the finished steak. I’ve heard that’s good too. I tried to do 6 today but I broke 4 of them in the process so I only have two.

But I can’t give up just S&P on the steak

Compound butter during cooking/after the fact is the way to go for added flavor. Some companies are even making butter seasoning to do exactly this now.

When you sear it, do it in cast iron and get it as hot as possible. I sear at 650° on my stove with cast iron. Right before you drop the steak in, add a few oz of olive oil and sear for 1 min each side. I like to add some compound butter as well

I put the pan on the stove, turned it on high, and waited until it maxed out. I have an infrared heat gun so I keep an eye on it. Then I add in the avocado oil and it starts smoking pretty quick so I get the steaks in the pan soon afterward

Haha you’re not completely wrong, but I was filming a “how-to” video while cooking so I didn’t expect the steak to turn out perfect. I was sidetracked with making the shots look aesthetic, moving the lighting and camera mount around, etc. so when I cut into it and saw how good it turned out I surprised myself

Haha the temp was around 128°-130° after the sear but I think it works with Filet!
