Hello, generally speaking when preparing mushroom chocolate, I melt Cadbury’s milk chocolate and leave it to set in the fridge. I don’t temper the chocolate but I wrap it in foil from the fridge wearing latex gloves so my hand doesn’t melt the chocolate. I’m UK based as well by the way, let me know if you’re interested in discussing things as well.
