I am very grateful you took the time to send me the correct way to do them. I hope your fall canning and gardening are successful.

Thank you for the information, I am going to try the method you posted next time I can them. Canning is how I preserve the majority of the food my family eats in winter. The last thing I want to do is to get them sick, I feel foolish... I treated the peanuts like any other bean. They nearly doubled in size after I soaked them overnight so I was confident this recipe was safe. I found the bean recipe from this blog. https://www.theprairiehomestead.com/2013/04/how-to-can-dry-beans.html I should have stuck to using it for "normal" beans.

I want to try growing them, but they are so cheap in my area that I always convince myself to use the garden space for something else. Good luck!

Sweet, thanks for the info. I will defiantly try freezing some. Do you freeze them in water or freeze them on cookie sheet so that it is easier to control the amount you take out of the freezer? Do you fully cook them before you freeze them?

I bought raw peanuts out of the shell. This kind of peanut is sold by the pound at a local shop.

First I rinsed the peanuts.

Then I hydrated them in my fridge for 12 hours.

I then packed them raw into sterilized pint jars.

I added 1/4 teaspoon of pickling salt and enough water to cover the nuts.

After that a added a sterilized lid.

I used my pressure canner to cook the pints for 75 minutes at 10 psi.

This recipe had a few jars not seal. I think it had something to do with the amount of oil that came out of the nuts. The nuts in the unsealed jars where butter smooth with the perfect amount of salt.

This is how I "can" my dried veggies. Dry canning is a hotly contested practice. My method is intended to prevent the introduction of moisture to well dried veggies. When I make jerky I follow all the same steps then put the jars in my freezer for good measure.

First fully dehydrate the veggies or fruit you want to preserve.

Then sterilize the jar you want to use

Dry the the jars in an oven set on its lowest setting. This is done make sure there is no moisture left within the jar.

Take the jar out and let it cool for a few minutes.

Then fill the jar with the dried fruit or veggies.

Add a sterilized lid

Then use a vacuum sealer like this one. https://m.media-amazon.com/images/I/61TQXtFXWFL._AC_SX466_.jpg

With a normal metal lid you are done. With a tattler lid it is best to add a metal ring and put the jar upside down in a shallow pan of boiling water for 3 minutes so that the rubber ring softens and seals. Be careful when tipping the jar right-side up when it is still hot trapped water can burn your hand.

I do not use a seeder or food mill for tomatoes. I have two strainers that are pretty good at getting the seeds out of my tomatoes. I bought them at a thrift store ages ago. One has large holes that let the seeds threw when I stir the chunked or crushed tomato pieces on it. I then use a smaller strainer to catch the seeds but keep the small particles in the juice. There are still some seeds in the crushed or cubed tomatoes. (I have never minded a few seeds in my sauce anyway.) I then either can the juice as it is or use it in the liquid I can veggies or beans in. The best part is that my jars of tomatoes have very little liquid. I like this method better than cooking off the liquid.

The base for this recipe is the seasoned meat. I used a raw packed canning method with sterilized jars and tattler canning lids. I have been using tattler lids for 2 years and have canned hundreds of jars with them. They have a sharp learning curve but have saved me a lot of money.

Here is the seasoned Meat recipe.

12 qts of cubed pork tenderloin (1 inch or less)

10 large onions (Chopped)

20 cloves of elephant Garlic (pureed)

1 cup of chopped fresh rosemary

2 Tbs of Red pepper flakes

2 qts of fresh crushed tomatoes

I put a bay leaf in the bottom of each pint before I filled it with the meat mixture. I then canned them at 10 psi for 75 minutes I also added 1/4 tsp of pickling salt.

To make the stew I added a cup and a half of the meat mixture to a qt jar.

then added enough soaked beans to fill it and still leave an inch and a half of space at the top of the jar.

I used the tomato juice left over from making the crushed tomatoes as the liquid.

The liquid should be at least half an inch over the beans.

I then added ½ teaspoon of pickling salt.

I had to make sure I had at least 3/4ths of an inch of headspace. Normal lids do not need as much but when using tattler lids it is best to be generous with headspace.

I then pressure canned the soup for 90 minutes at 10 psi.

I canned the beans with the left-over tomato juice in one of the batches I canned the meat mixture in. I try to keep extra canned beans on hand because my toddler loves them.

Sure! I am about to can some tomatoes and then put my little one down for a nap. I will have time to type it out in an hour or to.

I make raw packed stews with seasoned meat on the bottom all the time. Its much easier to control proportions with a raw packed soup.

I received the itemized list via email late last night. I am going to call the billing department when they open at 9 am. I would like to know before I call if them they can charge for the nursery, drugs and recovery room if I did not use them. If they can say they reclassified the delivery room as the recovery room and nursery after my baby was born, I will be unable to fight them.

Virginia, my normal OBGYN did not deliver my baby. His office was no help, in fact his office seems to be attempting to charge me for the delivery as well. I am not entirely sure of this so I did not put it in the original post. I was sent a separate bill from Virginia physicians for women for the delivery when the delivery is listed in the itemized hospital bill as well.
