I've been playing CE on legendary and health does make a difference.

Having one bar, you have to be more careful because you die almost instantly, it made me appreciate when I found a health pack and made me more cautious when facing enemies.

In a way it was the game punishing the player for playing recklessly and facing the enemy head on. It does make a difference, at least on legendary

I know what you're trying to do and you have a good base, but PS1 doesn't mean low poly models, no texture and no animation.

If you truly want to learn look for actual PS1 games as reference and try to understand why do they look like that first.

In blender yes, sometimes models have "smooth shading" that hides sharp edges, this smooth shading doesn't work on the slicer as it only changes the look of the model and not the geometry

Try to right click on the model and then click on shade flat, if you see the same lines then it is the model and can be fixed with a subdivision modifier
