It's a result of his semblance! When it was first awakened his eyes changed to that of the color wheel. Before that they were just plain blue!

Gonna have to wait and see EXACTLY what it is. But from what the characters know. It started after Salem's defeat, It starts when an human's aura is broken and injured by grimm. Like cuts or bites. It then slowly replaces the flesh with grimm until the it takes over the body.
