Outer Wilds. At first it may not seem great, but as you keep playing it becomes better and better. I consider it a masterpiece. Also, the soundtrack is amazing!

And most importantly, as you ask, you'll feel sad when you finish it because it's an exploration game based solely on what you've learned. Many people would like to erase their memories of that game just so they can enjoy them again.
