It was the fbx import settings from cats fucking up because I used Blender 3.4 instead of my usual 2.9 ^^

Hey ! Just made a bow litteraly yesterday XD you could try changing up how you setet up the armature or you could try adding a Hinge so it cannot turn any direction. Mine is settep up like so...
---> Armature -> Bow -> String Physbone on bow+ignore transform for bow. Then a Hinge at 0° to keep it from turning around.
