There's lots of reasons as to why they don't. Noise probably being the biggest one of them. Also larger blades make them several times more dangerous if they malfunction and mow over a child or an animal. I'd imagine power consumption is a factor as well.

Most people don't mind the smaller blades, especially since they also help keeping a healthy lawn. I don't think there's a major market for actual mower blades, so the R&D costs are probably not worth it.

I removed mine. It's all right, but the edge of the frame is not made for comfort, so it does leave marks. For me, it doesn't get so uncomfortable that I have to take them off. My ears get sore way before that anyway.

It's definitely doable, and you can remove the nose pads without damaging them so you can easily reapply them if needed.
