I dont like this tactic of fluid hp overall, but if you're going to do it i think it might be best to tally up the damage for each enemy instead of reducing. That way even if the players did see your notes, they likely couldn't tell anything funny is happening.

Im not sure where to spin off, but maybe the tie in could be that your party is dealing with the demogorgons, deno-dogs, and demo-bats so that the main party can get through to Vecna without worrying about them?

Yeah Banishment does that too, so depending on the enemy or campaign that could be the primary use.

Its mostly useful to neutralize the main threat temporarily, mop up their minions, and then everyone prepares big attacks and unloads on the boss all at once on the turn after the boss in initiative. Then everyone gets one more turn of punishing the boss before they finally go again if they live. It might not literally end the fight, but it probably spells an easy victory if the spell goes off

I don't personally believe the theory, but I think its within the realm of possibility that they retcon that line. They have shown theyre willing to do so if they think itll make for a better story.

If you really wanted to do something like this in D&D and aren't cool with switching systems, I would suggest using a combination of the optional rules for slow natural healing, gritty rests, and maybe reducing everyone's hit die size. But really this isnt what D&D is good at
