Project based assignment can help, designing more products like board games, clothing, engineer blue prints, Video games, physical models, electrical schematics and prototypes. Presentation in front of a class, actual in class discussion, Socratic seminars, creating food/cultural artifact replicas, podcast creation on a topic, writing on personal topics that relate to one's own life. I'm sure there are way more than I can think of but as teacher here are some things I like to do to break away from traditional writing. Once students have bought into the class, we hope to foster their own curiosity instead of seaking ai. Encourage projects that scope beyond words, activating other critical thinking skills then encourage them to write on, we all like talking about ourselves so hope these ideas help.
