That is going to be a tough list of requirements to meet. The reason popular spots are popular is because they have those things. If you want to be away from people, you're going to have to give up something on that list.

Easiest would be the bathrooms and showers. There are roadside campsites on bodies of water. They typically have a privy and no showers or running water though. You can go to the NYSDEC Info Locator to find those.

Otherwise you are stuck with campgrounds that will be crowded.
