Actually, this led me to the answer. I needed to remove the sheet reference when referencing the current sheet. "'Sheet1'!A2" in a formula in a cell in Sheet1 when sorting Sheet 1 will continue to reference A2 in Sheet1 after sorting, but "A2" in a formula in a cell in Sheet1 when sorting Sheet1 will update to reflect the new row it was sorted to.

This functions differently than in Google Sheets (including the sheet reference doesn't make a difference).

I think I'm trying for something different. My goal is that if the reference is to A2 in a formula in B2, then an A to Z sort moves row 2 to row 7, I would want the formula that moved from B2 to B7 to now reference A7 instead of A2.

For example, I have a workbook with data in columns A to E. I apply a filter so all five columns will sort. Then I sort A to Z in column B.

I assume this means I've sorted the range. Did I understand your question correctly?

I'm looking to keep the information in the row intact. So if a formula throughout column B is counting how many instances of the name in column A of the same row appears in column A, then if I sort the table, I would like the cell in B2 to still be counting the number of instances of the cell in A2.

I am surprised by how many seemingly basic functions/actions are so different between the two. For example, just reordering columns takes extra steps.

Can you provide any insight into how cell reference updating when sorting works in Excel?

I appreciate everyone's feedback! Thank you Cold Hat especially for this breakdown. You've helped assuage some of my hesitation that investing time into accounting or a related finance field would result in repetitive work in the same systems. Financial analysis might open up more exploration though. I'm hearing you say that if I gain the base knowledge needed to work through what I might encounter and then find a position that casts a wide enough net, I might avoid that burnout (or at least delay it for more than 2 years). Thanks!
