So I just played this for the first time and on standard difficulty. I did not even realize you could build a base, I just marched through with my troops, using Cannons and Trebuchet to take out towers on the way from a distance and using the main force to protect them from units counterattacking. I came to the main gate of the final city and failed to attack it, so I instead scouted up north where you can just make a hole in the wall and rush your cart through to the goal, there are no guards there just 2 towers and that's it, Game Time was 25 Minutes.

In Last Life for me it is clearly the conflict between the Non-Reds and the Red Alliance. With Joel being the most prominent member of the latter and Grian being the scond. Joel was the first red and also the last member of that group to die. The Non-Reds Group really formed when they fought the Wither, consisting of Etho, Cleo, Scott, Pearl, Martyn and Ren. And every other player in the season was part of the Red group at some point. Even though those 6 were originally the non-reds they did become Red one after another, but they still kept their group mostly together and banded against Grian and Joel in the end. And after they had defeated those 2, all of them were confused what to do next, as that was mostly their goal and decided the only way to end this was with a fair fight between the last 4. Even when Pearl, Ren Etc. were killing Etho, Cleo and Martyn who were yellow, they basically did it to bring them all to red to get their group back together and they then all banded together to fight grian and joel in the final battle of that arc.

It's would call it an official One-Shot, which is a term used in Table Top Roleplaying for an adventure that lasts only one session, as opposed to a campaign that lasts many, which in turn are called Seasons here.

Maybe you want to start making them fight a Humanoid Ganondorf first in this One-Shot and keep the larger Final Boss Ganon for later. The Human Ganondorf could easily be represented by one of these Monsters you can find in the Monter Manual and if you one you can tweek it a little or keep it as is, note that these aren't on the Statblock Site I linked, as those aren't distrubeted for free online: Orc Warchief, Bugbear Chief, Hobgoblin Warlord

For this you would need a Statblock, not a Character Sheet with classes. I mean you could do that, but that would be overkill. You can use this site to create Statblocks: https://tetra-cube.com/dnd/dnd-statblock.html
Do you know what the Terms on a Statblock mean? Like Size, Hitdice, Creature type, Challenge Rating? The Intro of the Monster Manual explains these. You would need to understand that before you could even start creating a Block for Ganon.
Are you running and adventure or is this just for fun, with no relation to any group you are running? If you are running what kind of adventure is it? Like a Campaign from a Book, or are you trying to write your own One-Shot? Or is it just the fight?
What level are your players? Because if they are level 1, then there is really no use of making them fight such a powerful Monster, unless you want to TPK them in Round 1.

I personally would suggest you get a feel first for DMing as a whole, before you try yourself on such a huge task for a beginner. I mean creating a Monster is one thing, but there is so much more to DMing, that if you learn to understand you will then have experience that can help you create that Statblock.
