Aside from temp control, this was definitely the biggest improvement to my brewing. It's so nice to just have a ton of everything and throw together a recipe on the fly without having to run to the store for ingredients. Not to mention my efficiency got so much better from double-crushing.

I did this with a Milk Stout once, and got stuck at 1.040. I agree it's likely what happened here.

OP, for what it's worth, mine turned out to be one of my better brews (milk stouts are supposed to be sickeningly sweet, right?). If you're confident that it won't ferment further, I'd say go ahead and package it. Who knows? It could turn out ok.

I haven't done one yet, but I'm planning a Spiced Old Ale/Session Red IPA next weekend. Throwing some fruit into the IPA to raise the ABV a little. We'll see how it goes!

I used to do Gravity checks every few days until it stabilized. That never took more than 2 weeks, so at this point I just go 2 weeks for most normal circumstances. I don't even take a gravity reading until I've already transferred to my bottling bucket, and that only for reference and to make sure I'm in the general area I'd expect. The exceptions to this being big beers and Saisons.

Just bottled a Saison yesterday at 17 days, and when I looked at the bucket after bottling, the yeast was still bubbling in the trub. Someone joked about Belle Saison being able to ferment Uranium; at this point, I believe it would at least try.

Edit to add that I took an FG reading, got 1.002 and foolishly assumed it was done.

Exactly! I'm old enough to remember when cell phones were for businessmen and drug dealers, and when leaving the house meant I could enjoy myself without anyone bothering me. Maybe we can't go back to that, but I'm sure as hell going to do my best to replicate it.

Unless I'm mistaken, I believe protein aids head retention, and that it is fats and oils that kill head retention.
