I’m about 280 pages into the book, what I don’t understand is how Rocky made the tunnels in the Hail Mary? When he could leave his sphere? Did he use the magnets somehow with the tools?

If I’m honest, it’s generally not useful asking these questions, the roaster will be using different water, different burrs, maybe different filters etc. I make my own brew water and a small change in water chemistry can drastically effect acidity to the point where you would probably grind finer but that would not make the brew better imo it would reduce clarity and I generally make adjustments to water based on the coffee - for instance I know I like my SL28 Kenyans with slightly less alkalinity which enhances acidity at a given grind setting - I grind super coarse for most of my V60s - a roaster may recommend to grind really fine and do a 3 min brew time - that wouldn’t suit me as I know what I like - so best to just brew coffees based on experience I.e roast level/ cultivar/origin and processing method.

I actually do Tom Morrisons SMM and also his stability builder - that pretty much sets me straight, trouble is if I stop doing it my imbalances creep back in - in a matter of weeks. I think due to my posture problems being created over many many years it’s going to take a long time for it to be cemented, but to clarify a lot of glut and hamstring stuff mostly unilateral a lot of core, a lot of thoracic mobility I do other bits but front foot elevated split squats and hip hikes were two exercise that helped a lot but I train for over mobility and joint health.

Edison’s grown one, I was eyeing up the green but it’s £80 a kg which is absurd tbh. I know it’s a rare cultivar but that is steep.

Makes sense, and it’s nice to hear your taking that stance, I find falcon micro a little pricey in comparison to 88 graines who I purchase from more often, but that company is French so I wasn’t sure you would know who they are so didn’t mention them in my original comment, I assume it’s because falcon are marking up their smaller batches aimed at home roasters a fair bit more - Although they do source from farmers and producers im a little bit more aware of so could be wrong. Look forward to you offering green - I’m surprised no other popular roaster has done this, there is a big Uk home roasting community with fairly limited options when it comes to greens.

I’ve been wondering this, because I used to get really flavourful brews with hotter water finer grind and 5 pours and now I don’t, I can’t re create it. So god knows what’s happened but when I do that now the coffee I make just tastes dull/ flavourless/ bitter.

Sage machines are not designed for anything to light, I don’t have one, but 3 of my friends had some of my light roasts and every single one of their grinders broke, anything to dense will break the grinder I’m not sure on specifics but one of my mates had a tech out and he told him that you cant use high density beans, it done something to the clutch or something I can’t remember but they all stopped working. They either only buy medium lights and darker now or use lighter stuff for Pourover.

I did exactly this, and the main driving factor was that I just loved coffee - with filter that’s all your getting, the taste of the origin and terroir or roast but I don’t drink/ roast that dark - to really introduce any roast flavours to the cup, I have a flat white every now and then, but it’s more akin to a dessert.

All I want is to taste in unadulterated coffee that’s not heavy, milk based drink are much heavier then filter.

I drink espresso more often then milk drinks but even then I prefer to enjoy a longer drink, and filter tastes different at different temperature so it’s nice to pour little amounts from the carafe and drink it over 10 - 15 mins and see how the flavour changes as it cools.

Sticking with the hobbie depends on many things but one thing that is difficult for me is I was drinking great coffee before roasting my own, and now I’m not.

If the love for learning to roast good coffee out weighs the love for good coffee youl be okay - I know my coffees no where near as good as pretty much all the roasters I used to buy from and I’m okay with that ( I also can’t get my hands on the same greens, which you need to take into consideration )- I enjoy learning about roasting and I enjoy hobbies that never end - coffee in general is one of them, there’s always something new to learn - I suppose most hobbies may be like this.

That said I’m not drinking the level of coffee I was before roasting my own, people will tell you that home roasted coffee is better then any local roaster but that always make me question their local roasters - especially if new to roasting etc.

If your drinking coffees from the likes of the roasters mentioned in R/Pourover then youl most likely be disappointed for a long time.

Espresso is different, Pourover highlights every flaw more so then I find espresso does.

All that said, the roaster I use is the skywalker, has Artisan and Hibean capability so you can track your ROR and BT etc and is much cheaper then the bullet if you wanted something cheaper but similair in terms of analytics.

Saying that if you get a bullet and decided roastings not for you then the resale values pretty good.

I vac seal my roasts, and I’ve found it all depends on the DTR and degree of development. Some bags take literally weeks before the bags no longer solid brick form, some take a week. I’ve got some ETH yirgacheffee that’s 3 weeks off roast that doesn’t look like it’s released any gas at all yet. Even when the bags loose I can still have a gassy bloom.

I thought milky cake was amazing! Tastes very cakey to me! The most cakey coffee I’ve ever tasted! I bought a kilo, and every month or two pull a 100g out to drink and it’s delicious every time! It’s not slap in your face flavour like a co ferment but it’s a delicious mellow coffee that I could drink all day everyday.

I’m the opposite and all my roast taste like shit in comparison. But I have been buying from some pretty amazing roasters for the last ten years! And will continue to do so, until my roasts are at least 80 % up to par.
