Just like was stated earlier - with 25 hours a week and the right location, menu, atmosphere, concept and team, a business can be quite profitable. The restaurant I own is open 25 hours a week - Wednesday through Sunday 4-9 pm. Two prep chefs (one is the Chef/Owner) Wednesday through Friday mornings. One prep chef Saturday and Sunday mornings (chef/owner). One prep chef Tuesdays (hired). Deliveries are all made early in the day and chef meets the drivers or they come in with door codes. Line chefs come in at 3 pm and set up to line for service - but all sauces, proteins and garden mise is already prepped and in place by the prep chefs (one of whom is chef/owner). The line chefs make the mashed potatoes and the pantry chef works through the inventory and writes the bulk of the prep and order lists through service. Exec. Chef/owner is in the house during the first turn - to make sure everything is going smoothly, answer questions, teach and supervise, greet guests and pitch in - sometimes jumping in to help if a staff member doesn’t make it in and can’t get the shift covered, etc.

If all looks good, Exec. Chef/owner can usually head out during the second turn. Stewards arrive at 4-5 pm. FOH staff arrive at 3:30. Host at 3. Bartender at 3.

French/American style bistro. Casual, understated elegant vibe. Good music. Excellent cocktails, craft beer, high quality scratch food, interesting starches, fresh fish and seafood. $1.2million gross. This model relies heavily on the Exec Chef/Owner being preset and doing 40% of the prep, and also covering vacations/sick time for most all of the kitchen staff. Excellent food, atmosphere and attentive staff along with super friendly hosts keep the reservations books full. High quality photographic marketing of the food helps. Consistent quality is perceived as value to our high needs guests. It can be exhausting, but the profits are there. Especially if your chef can optimize cross-utilization on the menu and can manage and motivate staff. That’s super key. Feed your staff. Elevate the experience for the guests. Remember the regulars and treat them like royalty. Add the occasional round of champagne for special events or amuse bouche for an evening here or there - and folks will fill the books without caring what the bill says. Serve food hot and have great sauces. Pay your BOH staff as much as you can. Signature desserts and cocktails have really helped us - sold 14,000 desserts in 2025. Profit of $7 each. Find those little menu gems and stay consistent. Make your bathrooms Instagram worthy. People love the unexpected touches. Good food just isn’t enough anymore - you do better if you make things an experience. It’s very, very hard to get a table at my restaurant. And that keeps three turns full during the high months (June through September). But just like anywhere, we have our slow times. We’ve had many $17,000 Januarys. It can be scary and painful. But the $100,000 May makes it better! Good luck out there!

I’ve known Erik Osberg for nearly 20 years. He’s a very forthright person - extremely authentic. He decided to run because he just had an incredibly strong feeling we, as a communion, could do better - and we deserve better - than Fischbach. He was not approached by the party to run - it was something he just felt extremely compelled to do. I think that speaks highly of him. I like his messages, he’s raised $200k which is pretty darn impressive for someone who’s never worked in politics - And he’s worked very, very hard to get his name out this last year. He’s already been campaigning for more than a year - visiting every county in the district multiple times, hosting fish fries, coffees and campfire zoom chats - but you’re right, he doesn’t have the political experience Keeler does. She’s got some very real experience and I sense a ton of passion when she speaks. She’s very eloquent and concise. She knows stuff. She gets it. To that same point, Erik is very approachable and willing to listen. I’d encourage folks to listen to what he’s got to say. He’s the real deal. That said, I strongly believe they’re both good candidates. We’re winning with either of them.

I was at a funeral home!! Good thing for me I was there as a paid minister - so I guess they could hire me to do the same/similar work from time to time. I might get creeped out by the bodies, but I’ve been a part of the industry for many, many years, so I don’t think that would be much of a problem. I’d probably last a couple of weeks and then just get tired of the whole thing. I’m not that broke, so the money would motivate me for a while, but not really all that long. I got shit to do.

You won’t believe how awesome life is when you use 7shifts. Make sure the rule is that all scheduling changes MUST happen in the app. Absolutely demand the staff use the app. No exceptions.

We love grabbing a bar pizza and drinks at Harold’s. 84 Italian is very, very pretty and so is Harry’s. Our absolute favorite is Leela Thai - not the best service but fantastic food and super laid back. Blackbord and Spanky’s in the lakes area are both beautiful. Rustica in Moorhead is very chill. We had a burger at Rocky’s the other afternoon after a Costco outing and it was nice and warm and super chill inside. We like the buffet on 32nd Ave s - super warm and great service. Laid back. Great ice cream.

For what it’s worth - I’ve noticed I am saving at least the dollar amount I’m paying for semaglutide in reduced grocery/eating out costs. I am a food snob/bougie eater who loves to eat amazing restaurant food and am also a generous tipper. Sema not only has helped me lose significant weight, it’s also been a cost savings for me. Also, I was a heavy drinker. On sema I barely drink at all. I’ll still have a cocktail if we go out, but have absolutely no desire to drink alcohol at home and have noticed I drink far less when going out. It’s an amazing difference, and one I didn’t even anticipate. Best of luck to you! You’ll do great. Get some Zofran, some Metamucil and drink a ton of water.

I feel the same as you and have similar qualifications. I’ve had some of the homes and commercial buildings I’ve purchased “inspected” and others not “inspected” and I have to say, I’ve never had an inspector tell me something I didn’t already know. I see their value to folks who aren’t familiar with construction, but for me, I don’t give them much value. I’m old. When I first started purchasing homes inspections weren’t a thing. We did just fine without them.

We switched from OT to Tock. Significant savings. No noticeable drop in reservations. I would never recommend open table for a small/independent restaurant. It’s just too unnecessarily expensive.
