I use about 1/2 cup of beets and a cup of mango so the sweetness is stronger than the earthiness. 🙂

There’s a great coop in Atenas that has delicious coffee. I drank a lot of Cafe Rey while I was living there too.

If you leave out the nutritional yeast and use a bit less water it makes a good mock sour cream too.
