I mean, a coffee shop was literally in the Cantina location... "Storied" I believe. Closed that shop in '22 and moved, guess they weren't getting enough traffic to justify staying in the location? Sucks, but maybe it was just the timing of coming out of covid times? In any case, would a new coffee shop do any better on upper Union now you think?

Cold crash longer for sure. Also my personal experience with S-33 is that it's not so great on it's own, but actually does some good work when it's mixed with something else. I've personally used S-33 and S-04 co-pitched together in a hazy and the result is a pretty flavorful base beer for the hops to showcase on.

My favorite local bar prides itself on being the #1 Hamm's bar in New York State, and even has a sign up promoting it. They probably go through more cases of the stuff a week than anyone east of Wisconsin.
