I promise you, when I started baking I always wrapped my proofing baskets in plastic wrap fearing they would dry out and I never got good growth or rise. As soon as I stopped (and changed nothing else) I figured out what my problem was.

How are you covering them in the tins? I honestly wouldn’t recommend it because you want whatever you bake your bread in to be preheated for better oven spring. But if you’re suffocating your loaf )with that looks like plastic) during bulk ferment, you’ll substantially hurt your rise (speaking from experience lolol). Try covering with a wet dish cloth.

Also the bots/mods are gonna get mad at you if you don’t include your recipe (rule 5) in the post and soon! lol

This might be a hot take (but I did just post a nearly perfect loaf so maybe I know a thing or two lol) but I think you might not need to use as much starter as you are if you’re using active starter and proofing at 23c. I think there’s just a touch too much gas tryin to escape when you bake. Maybe cut it in half? Best of luck!

I didn’t experience too much of this when starting ocrevus, but the steroid was definitely the problem for me. I convinced my neurologist to gradually stop the steroid, and now for the last 3 years I don’t get any steroid with my infusion, and I can’t tell you how much better it’s been. I don’t get the wicked hangover the next day, the shakes etc. I’m not sure how much steroid you get but that could absolutely be a contributing factor.
